We remain a very limited production (3.500 bottles).
It is a very special cava, the grapes of this Cava comes from the oldest vineyards. Its production is reduced. The vines are between 40 and 50 years old. With the fruit harvested manually we elaborate a very complex wine that we age in barrel during a short period.
It is a piece of art.
Traditional varieties of Penedes are vinified separately. The blending process is done and the resulting wine will age in barrels for about 5 months. The elaboration process is done following the Traditional Method.
Bright, golden color. It releases small bubbles slowly and continuously. It has a complex and pleasant aroma. It shows scents of yeast, almonds and toasted. It has an ample, harmonious and elegant taste.
Coupage: 75% Xarel·lo, 15% Macabeo y 10% Parellada.
Alcohol content: 12 % Vol.
Expedition liqueur: Nonexistent.
Ageing: 36 months minimum.
Serving temperature: 6-8 °C.
Riddling: Manually in riddling desks.
Food pairing: Appetizers, foie grass, seafood, fish sauces, rice with seafood, meat stews.
Presentation: Special bottle of 75 cl. Individual cardboard box.
Cardboard with 6 bottles or wooden box with 3 or 6 bottles.
